Asda Brownie Mix made Vegan

After a few days of cooking so much and having the cooking bug, I finally mastered the Asda Free From Brownie Mix. I have tried it three times, each time without success due to the need for the Egg part. After trying a variety of Egg replacements, I finally found the best one. A Flax Egg! The Organ Egg Replacer left the mix too crumbly and it wouldn't stay together. The Chia Seeds left the Brownie with a very odd texture. The Flax Seed actually binded the mix and tasted great too!

So here is my way of turning the ASDA Brownie Mix into a Gluten Free Vegan easy and quick delicious bake!

 

Ingredients:

Asda Free From Chocolate Brownie Mix

45g Dairy Free Butter

2 Tbsp Milled Flax Seed

5 Tbsp Water

15ml Water

Method:

1: Prepare a small tin with baking paper and grease. Preheat the oven to 180c.

2: Get a cup, mix the 2 Tbsp Flax Seed and 5 Tbsp Water thoroughly. Leave to thicken for about 10-15 minutes, until it is a sort of gloopy texture.

3: Weigh out 45g-50g Dairy Free Butter and melt it completely in the microwave.

4: Get a mixing bowl and pour the Chocolate Brownie mix in. Add the thickened Flax Egg, Melted Butter and 15ml of Water to the Brownie mix stirring well until a shiny mix is formed.

5: Pour the mixture into the tin and flatten the top, put in the oven for around 20-30 minutes. Although the packet says 12-14 mins, the Flax Seed makes it longer to bake.

6: Ensure the top is cooked properly, and that it isn't wobbling too much in the middle when picked up. Don't skewer it to check it is done as Brownies shouldn't come out clean and they should remain partly gooey.

7: Once cooked, leave on the side for 15-20 minutes in the tin to cool. Don't remove from the tin as it needs to cool to set a little more after cooking.

8: Once it is cool enough, remove from the tin and then cut into pieces. Enjoy warm for the first slice with Ice Cream, believe me you won't regret it!
