"Parrot" Rosti

After introducing the joys of Offbeet to my brother today, I sit here with a full belly and no more energy for food. Well maybe a little more cake. Whilst resting off my amazing lunch I have decided that I need to remember how to cook the Potato and Carrot Rosti, or Parrot Rosti to call it something more exciting. I always end up doing it differently or forgetting altogether how to make it. I know it's super easy, my cookery brain is like a sieve (ironic).

As this one ended up so well, I shall write it down in a recipe form and then anyone else out there wanting to try it can indulge too!

 

Ingredients: (Makes 1 and a half thin pan size Rostis)

2 small Potatoes (about the size of a plum) or a large Potato

1 Carrot

1-2 tbsp Dairy Free Butter

Salt

Pepper

Basil or Mixed Herbs

Method:

1: Peel the Potatoes and Carrots, cutting any bad bits off of them and the ends off of the Carrots.

2: Grate the Carrots and the Potatoes into the same bowl.

3: Warm up your muscles for the next part, you need to put the grated Parrot into a tea towel and wring/squeeze until you can squeeze no more. You should get a lot of the liquid out, the picture to the right is how much I got out.

4: Combine the Carrot and Potato together, season with as much Salt, Pepper and Herbs as you like mixing well afterwards.

5: Melt a 1tbsp of Dairy Free Butter in the pan over a medium heat, add a little bit of the melted Butter to the grated Veg leaving some still in the pan.

6: Spoon the mix into the pan, pressing down and together ensuring an even but not too thick coverage across the pan.

7: Fry for 5 minutes on one side, flip carefully as some of the edge will break off and cook for a further 5 minutes ensuring all parts have been turned.

8: Once both sides are nicely browned and you have ensured that all parts are cooked through, you can take off the heat. Mine looked like this...

9: Pair up with your favourite bowl ingredients or enjoy with a fry up! It's a very versatile side dish!

 

The easy Gluten Free Vegan "chef" has struck again. I love it when I can make something from scratch and it tastes pretty good too. This is one of my favourite quick side dishes as I love Potato so much and it goes with so many different food types.
