Pesto Tart

The first day of the year, first day of Veganuary and the continuation of my cooking adventure so I thought I'd start off 2018 the way I'd like to continue! I made a lovely Vegetable Pesto Tart which turned out pretty well, it was tasty and something different from what I usually make for dinner. It is definitely something I'd like to make again, so I'm sharing the recipe with you all and my future self in order to create it again, maybe adding some more veg variation next time!
It is very simple, uses few ingredients and takes less than half an hour to create so is an easy, delicious start for the year! So here goes...
Ingredients: (Makes 2)
1/2 Asda Free From Ready Rolled Puff Pastry
1/2 Sacla Free From Basil Pesto
2 tbsp Dairy Free Butter
5 x Cherry Tomatoes
1/2 Red Onion
Sprinkle of Rock Salt
Sprinkle of Pepper
Method:
1: Preheat the oven to 200c and prepare a baking tray with baking parchment.
2: Chop the onion into slices and separate the thin slices.
3: Cut the cherry tomatoes into slices, I discard the ends and just keep the middle part.
4: Cut the pastry in half and half again, (set aside the other half of the pastry for another time, or use for 4 tarts) melt some butter in the microwave and then spread over the pastry.
4: Fold the sides to form a crust which then in turn creates an area to put the fillings into without leakage (except mine leaked, so pack those edges tightly!).
5: Add the Pesto to the centre of the pastry, then places the tomato and onion on top, with a sprinkle of salt and pepper. I also spread melted butter around the edges to give them a nice golden finish.
6: Place in the oven for 10-15 minutes, until the edges turn golden brown and the base is cooked through so you can lift it without it sagging. In the great words of Bake Off, you don't want a soggy bottom, although it might be a little wet from the Pesto oil!
7: Serve straight away and enjoy!
This was a great dish, I hope you enjoy it if you decide to make it. I had mine with a little veg and some homemade roast potatoes!
