For a trip to visit my family I made some Mushroom Pizza's from scratch and without a recipe, as they turned out really well I'd like to share the recipe on here in case anyone would like to use it in the future or if I forget how I made them!! This makes about 4 Mushroom Pizzas, depending on the size of mushroom you buy.
Ingredients:
Portobello Mushrooms or Large Mushrooms
Half an Onion
1Garlic Clove
2 tbsp Olive Oil
1Yellow or Orange Pepper
Tin of Chopped Tomatoes
Salt
Pepper
Dried Basil
Violife Vegan Mozzarella Flavour Melting Cheese
Method:
1: Dice half an onion and crush one garlic clove then chop finely.
2: Deseed and cut the pepper into squares.
3: Put about 1tbsp of Olive Oil into a pan and preheat.
4: Fry the onion and garlic until softened and slightly browning.
5: Add the peppers and fry for a few minutes.
6: Add half the tin of Chopped Tomatoes and then add about 50-100ml of water and let simmer until reduced.
7: While it is simmering add a pinch of salt, pepper and basil to the pan.
8: Prepare the mushrooms by taking out the stalk. Grate some of the Violife Cheese and put aside. The cheese is to taste so choose how much you would like on it and what size grate you would like. The larger grate, the more gooey and powerful the cheese will be on the pizza.
9: Once the tomato mixture is reduced and heated through, take it off the heat and prepare a baking tray with foil, spreading the other tbsp of olive oil evenly across the tray.
10: Place the mushrooms on the tray and add a heaped table spoon full of the sauce to the mushroom, making sure to fill it but not so much that it will bubble over in the oven.
11: Add the grated vegan cheese to the top and place in the oven for around 10-15 minutes on 200c. It will depend on your oven and the size of mushroom how long they will take, so keep an eye on them and when they turn a dark brown and the cheese is fully melted, it is time to take them out.
12: Lift carefully using a spatula and place on plate then enjoy!
This is a very simple recipe that can be very easily adapted to suit various vegetables, I shall be trying a stuffed pepper soon however with a drier recipe as I feel this one would turn it into a pepper soup bowl! I hope you enjoy!
